        Crema catalana




Catalan cream (crema catalana) is a Spanish cooked cream, quite similar to pastry cream, but thicker due to slightly different proportions, and flavored with lemon zest and cinnamon.



Ingredients



  • Three cups of liquid whipping cream,
  • Two cups of pure white sugar,
  • The yolks of six eggs,
  • A teaspoon of powdered vanilla,
  • Two sticks of vanilla,
  • Half a cup of custard sugar,
  • Some cranberries (for decoration).
  • Some mint leaves (for garnish).


Instructions




1. We put a saucepan on the fire, put the amount of cream and vanilla sticks in it, leave it on a low heat, let it boil for ten minutes, then turn off the fire and leave it aside.

2. We whisk the egg yolks. Add sugar, powdered vanilla and custard sugar to the egg yolks, whisk the ingredients well for five minutes. We start adding the amount of cream gradually over the beaten egg yolks, and mix the ingredients well until they become thick.
3. Pour the mixture into serving cups. We prepare the oven tray, and put boiling water in it, approximately half the height of the tray.

4. We put the serving cups in the tray, and put them in the oven for a full hour, until they are ripe and golden, and we leave them aside until they cool.

5. We serve Spanish Catalana cream cups, after decorating them with a few mint leaves and cranberry berries, and serve them while they are cold.
